  As a young man with a growing reputation(名声),Albert Einstein received many invitations to explain his theories at different universities. On these trips hisdriver was always the same – a man called Hans. Hans often said to him, “It’s a pleasure to drive a genius(天才) like you,Dr Einstein.”

  One evening, on their way to a distant university,Einstein felt so tired that he didn’t want to give his lecture. However, he didn’t want to let hisaudience down either. “You don’t have to give the lecture”, said Hans, “Ican give it for you. I’ve listened to your lectureso many times that I’ve learnt it by heart. No one knows you at this university, so they won’t find out.”

  Einstein agreed with Hans, so they changed places. At the university, Hans

  was guided to a platform, where he stood surrounded by professors and students. Einstein tooka seat in the audience, listened to Hans give his lecture perfectly, and joined in theapplause at the end.

  However, before Hans leftthe platform, a professor shouted from the audience, “I’d like to ask you a difficult question.” He then asked a question so difficult thatHans had no idea what he was talking about.

  Einstein thought, “On no! Now we’re in trouble.” But Hans just laughed and said, “That’s not adifficult question. Infact, it’s so easy that even my driver knows howto answer it. Hans, please…”

  Einstein stood up andanswered the questionperfectly.

  They left the university, with Einstein driving. A little later, Hans offered to drive. “No, my friend,” laughed Einstein. “It’sa pleasure to drive a genius like you, Hans.”

  As more and more visitors from other countries come to China every day, many restaurants in China provide English translations of their menus in order to make it easier for foreigners to order Chinese dishes. Except for the convenience of ordering, some restaurants also hope that the translations will increase foreigners’knowledge ofChinese dishes.

  However, the precision(准确) of the translations has caused public discussion recently.An article in China Youth Daily says that the English translations of the names of traditional Chinese disheson menus haven’t lived up to public expectation. According to the article, most English names ofChinese dishes are shortof the attraction and cultural meaning. Instead, the

  translations only list each dish’s ingredients. For example, one English name of a Chinese dish appears as “stir-fried mutton slice with Chinese onion and green scallion(葱爆羊肉)”. Because the translation only focuses on the ingredients, it failsto describe the special Chinese cooking method.

  There is another example of “Fotiaoqiang”. There are many stories on the history of the dish. Among them, a common story is about a scholar traveling on foot during the Qing Dynasty. While he traveled with his friends, the scholar kept all his food for the journey in a clay jar used for holding wine. Once they arrived in Fuzhou, the capital of FujianProvince, the

  scholar started cooking the dish. The smells spread over to a nearby Buddhist monasterywhere monks(和尚) were meditating(静思). Although monks are not allowed to eat meat, one of the monks who was attracted by the smell jumped over the wall towhere the scholar was cooking.

  A poet among the travelers said that even Buddha would jump the wall to eat the delicious dish.

  Foreigners are likely to be confused when they see “Fotiaoqiang” on the menu. However, if we just list the ingredients of the dish, including chicken, duck, mutton, pig stomach,pigeon eggs and seafood, this translation fails to express the cultural meaning and charm of Chinese traditional food culture. Therefore, translators

  should provide more beautiful translations of the

  names of Chinese dishes. A more vivid English translation is very important to provide international visitors with a betterunderstanding of Chinese dishes.
