Some friends asked me these questions.

  How is Chinese food like?

Are all Chinese foods greasy and spicy?

Why are Chinese people always eating?

Why does our textbook always talk about eating?

  …

Well, as you know, China is a large country with a huge population. So the biggest issue is always to feed people. We did have a hard time, but we got over it. And people living in different areas managed to find the best food and the best ways of eating of their own.

After hundreds of years, there are what we have, the most typical 8 Chinese cuisines.

To save time and avoid confusing you, today we just talk about the basic features of the 8 cuisines.

There is one thing we should know.

The SHORT names of provinces are used.

川(chuān) stands for Sichuan province. It is known as the most common food in China. You can find Sichuan restaurant all around China. (Please check our last post if you want to know more about Sichuan Cuisine)

Sichuan Cuisine is NOT the only cuisine in China!!! 湘(xiāng) stands for Hunan province. It is similar to Sichuan Cuisine, but it’s not numb. Also, a lot of Hunan Restaurants can be found all around China

鲁(lǔ) stands for Shandong province. Shandong Cuisine is also salty, but it’s because of the soy sauce. And it’s not spicy.

徽(huī) stands for Anhui province. Anhui people like fresh seasonal foods. There are more stewed dishes than fried dishes. So the dishes are always with a thick sauce.

苏(sū) stands for Jiangsu province. Jiangsu Cuisine includes Shanghai cuisine, Suzhou cuisine, Wuxi cuisine etc. So dishes around these areas are kind of similar. In general, Jiangsu Cuisine is less flavored. People prefer to steam to keep the original taste of the food.

浙(zhè) stands for Zhejiang province. Zhejiang Cuisine includes Hangzhou cuisine, Ningbo cuisine, Shaoxing cuisine etc. The city Shaoxing is famous for nice rice wine, which is called Shaoxing Wine. With golden color and fragrance, Shaoxing Wine is incredibly popular. People drink it and cook with it. It can reduce the raw smell of fish or meat, and gives dishes a special good smell.

闽(mǐn) stands for Fujian province. Fujian Cuisine includes Fuzhou cuisine, Xiamen cuisine, Quanzhou cuisine etc. Soup is one of the most famous dishes in Fujian. Fujian people are good at cooking foods from both mountains and sea. Cooking seafood with chicken soup is one of the typical ways of Fujian Cuisine.

粤(yuè) stands for Guangdong province. Guangdong Cuisine includes Guangzhou cuisine, Kejia cuisine, Chaoshan cuisine etc. There is a Chinese joke. People say Guangdong people eat whatever they see. Actually, it’s just because they are good at discovering new food and dare to try. Guangdong people steam a lot to keep the original flavor of foods. The most typical food is, of course, seafood.
